Slow Cooker Garlic & Butter Rabbit

This slow cooker meal is pure winter comfort food, warm, filling and delicious!

Ingredients

  • 6 Rabbit Thighs, Bone-In
  • 2 lbs Baby Red Potatoes
  • 3 tbs Italian Seasoning
  • 1 tsp Sea Salt
  • 1 tsp Lemon Pepper
  • 7 tbs Butter, Melted
  • 6 Cloves Garlic, Minced
  • 1/2 Cup Chopped Chives or Green Onions or Fresh Parsley
  • 1/2 Cup Shredded Parmesan

Instructions

  1. In a 5-6 Quart Slow Cooker, add the rabbit pieces.

  2. Melt butter and add the Italian seasoning, and garlic to the melted butter. Mix well.

  3. Drizzle the melted butter mixture over the rabbit, add potatoes and sprinkle the salt and pepper evenly. Potatoes can be kept whole or cut in half depending on the size.

  4. Cook on medium for 6 hours. Top with freshly grated parmesan and your choice of fresh herbs. Serve immediately.

Recipe Notes

Bone in chicken can be easily substituted for rabbit, I would cut back the butter to 4tbs with chicken.
